This is also to thank you for your friendship, support and motivating to me to write. Shobana, you gave me the confidence I needed to post my ramblings and so here I am thanking you again and at the same time dedicating all my flabs to you guys for posting recipes, which I end up trying and hogging. There are more people I would like to thank, but they will have to wait for their turn!!! Meera your spaghetti was a major hit and Shobana, your simple spinach recipe is an all time favourite. Usha, your sambhar got all praises from my son, who generally thinks eating food is a waste of time unless it is burgers, chips or pizza!
I managed to get a recipe for the eggless banana loaf you asked for. It turned out delicious, not my own recipe, got it off the net. Just added or reduced ingredients to my liking
Plain flour – 1 ½ cups
Wheat flour – ½ cup
Bananas – 3
Sugar – ½ cup
Baking soda – 1 spoon
Butter – 125 grams
Vanilla essence
Raisins
Walnuts
Salt – ½ spoon
Milk – 2 tbspns
Mash the bananas and mix it with the butter. Mix the flour, sugar, soda, salt, milk, vanilla essence and add the banana mix to it. Transfer to a loaf pan and sprinkle some walnuts and raisins and bake for 45 minutes or until toothpick comes out clean. Enjoy and let me know
Rice flour – 2 cups
Urid flour – 1 tablespoon
Butter – a big blob
Jeera – 2 tspns
Salt
Mix all the ingredients together with water. Make soft dough and heat oil. Use a murukku press, with a thenguzhal disc. Take a handful of dough, put it into the press and press gently onto the hot oil making a concentric circle as big as you require. Fry till it turns light golden brown and make sure to cook both sides. After it cools, store in an airtight box. Usha, your story reference to diwali gave me the inspiration to make this.
